About the role
Spice Republic is seeking a talented, passionate, and experienced Specialty Chef to join our culinary team. We are looking to elevate our dining experience by introducing authentic South Indian cuisine. If you have a deep mastery of southern regional flavors?from perfectly crisp dosas and fluffy idlis to aromatic curries?and possess a strategic eye for menu development, this is the perfect opportunity for you.
In this role, you will not only lead the South Indian station but also collaborate closely with management to design, engineer, and refine our menu offerings to delight our guests.
Key Responsibilities
- Culinary Excellence: Prepare, cook, and present high-quality, authentic South Indian dishes (including dosas, uttapams, sambar, chutneys, biryanis, and regional specialty curries).
- Menu Development & Innovation: Collaborate directly with leadership to create, test, and implement exciting new dishes and structured menu packages.
- Station Management: Manage daily prep, inventory, and station setup to ensure smooth and efficient execution during peak service hours.
- Quality & Cost Control: Maintain precise portion control, minimize food waste, and monitor ingredient quality to support kitchen profitability.
- Food Safety & Hygiene: Uphold rigorous sanitation, cleanliness, and food safety standards in accordance with local health regulations.
- Team Collaboration: Assist in training kitchen staff on South Indian culinary techniques and flavor profiles to maintain consistency.
Qualifications & Experience
- Specialized Expertise: Minimum of 2?3 years of professional kitchen experience with a dedicated focus on authentic South Indian cooking.
- Menu Design Skills: Proven track record or strong interest in menu engineering, costing, and recipe development.
- Technical Mastery: Hands-on experience with specialized equipment, such as commercial wet grinders and large dosa tawas.
- Efficiency: Ability to thrive and maintain composure in a fast-paced, high-volume restaurant environment.
- Certification: Current Food Handler?s / FoodSafe certification (or local equivalent).
- Attributes: A creative mindset, strong organizational skills, and a team-first attitude.
