Chef de Partie – McCullough's Pub | The Glencoe Club

As Chef de Partie, I lead the daily culinary operations of McCullough's Pub, ensuring the successful execution of high-quality à la carte and banquet services in a fast-paced, member-focused environment. I supervise and mentor culinary team members, including line cooks, kitchen expeditors, and dishwashers, while maintaining exceptional standards of food quality, consistency, cleanliness, and professionalism.

Working closely with the Executive Chef and culinary leadership team, I contribute to menu development, feature creation, banquet planning, and operational excellence. I am responsible for executing menu items to the highest standards, supporting staff development, and ensuring compliance with food safety and workplace safety regulations.

Key Responsibilities:• Lead and execute daily food service operations, ensuring quality, consistency, and timely delivery.• Prepare and oversee menu items, sauces, soups, proteins, garnishes, and daily features.• Collaborate with culinary leadership on menu development and feature creation.• Coordinate banquet and special event preparation with kitchen and front-of-house teams.• Supervise, coach, and support culinary staff during preparation and service.• Assist with employee training, onboarding, and performance development.• Maintain strict adherence to food safety, sanitation, and workplace safety standards.• Foster a positive, respectful, and collaborative kitchen culture.
