Un Coteaux du Layon millésime 2018 aux conditions météo inégalées jusqu'au dernier jour des vendanges : des baies gorgées de soleil, parfaitement mures, très riches en sucre, une botrytisation providentielle, entre chaleur et brume matinale. Après un pressurage très doux et une fermentation lente de 3 à 4 mois, cette cuvée s’est affinée 12 mois en cuve pour garder la minéralité du terroir et l’authenticité des raisins.

My name is Quentin Cailleau, i’m the 3rd generation at Domaine Sauveroy. The estate, created in 1866, is located in the heart of the hills, near the river « Layon », bordering the village of Saint-Lambert-du-Lattay in Anjou. My grandparents acquires this vineyard of a few hectares in 1947 and my parents took over Sauveroy in 1985. Today we have 28 hectares of vines, mainly on Chenin Blanc and Cabernet Franc vines. We have always been working in the respect of the environment and are starting our first year of organic conversion with 12ha of Chenin blanc. At Domaine Sauveroy, it's the terroir that makes the difference. Quality soil always expresses the best, whatever the vintage. The vinification is sharp, mastered but without artifice to let the terroir express itself.
