We are currently hiring an Indian Cuisine Chef to join our dynamic kitchen team. The ideal candidate will have a solid culinary background, strong leadership skills, and experience in restaurant or catering environments. The Chef is responsible for overseeing daily food preparation and production, ensuring consistency, quality, and adherence to airline specifications. Responsibilities Prepare and oversee the production of Indian dishes in accordance with approved recipes, menus, and airline specifications. Prepare meats, fish, vegetables, rice, sauces, curries, side dishes, and garnishes. Use various cooking methods, including roasting, frying, steaming, grilling, and baking. Prepares food by cleaning, peeling, mincing, cutting, chopping, mixing portioning, measuring ingredients, packaging and labelling Maintain proper food production records, ensure all equipment is operable Responsible for sanitation and post-service set-up Notify manager of any maintenance repairs need or unsafe conditions Taste and smell prepared food to determine quality and palatability Monitor temperature of hot and cold foods through food preparation and service to ensure that established temperature goals are met prior to steam table transfer and maintained throughout meal service Studies recipes assigned by the Executive Chef, prepares and coordinates all meals Coordinates prep for the following day’s menus Supervises cooks and perp workers, manage the prep list to plan duties Ensures standard of recipes to maintain consistent quality Plans, modifies and develops menus based on the airlines requirements Performs pre-meal meeting with food directors and other team members to review detail of the menus and plan the production Provides training for kitchen staff Assists in the coordination and execution of special menus for client presentations Ensures all kitchen equipment is in working order and kept clean at all times Wear food safety equipment while on duty, use work safety equipment while on duty Maintain good portion control and forecast of production Practice proper grooming, personal hygiene, and use safety equipment Make sure that staff places racks of products in cooling tunnel or any other available waiting area, stocked and ready to go Communicate effectively with kitchen personnel & other unit departments Compliance with all company service standards, health & safety procedures, food safety requirements Perform other duties as assigned Previous experience as an Indian Cuisine Chef or in a similar position in a restaurant, hotel, or catering operation is required. knowledge of Indian cuisine, ingredients, spices, recipes, and cooking techniques. Experience preparing Halal, Middle Eastern, or other international cuisines is a strong asset.
